Gluten free pear cake


So the original recipe I made up used apples.  These apples are supposed to be a bit old, and past the best by appeal date.  This recipe was supposed to use them up.
The pear recipe is just a swap of apples with pears.  Originally I had a full cup of sugar as well but my kids actually thought it was too sweet so feel free to tweek this if your family has a sweet tooth.  As you can likely tell by the photo,these pears are a bit brused.  The kids didn't want to eat them so I decided to make a cake for dessert tonight.  

Ingredients:
3 pears 
3 eggs
1 cup gluten free all purpose flour
1/2 cup sugar
1/2 tablespoon of baking powder
1/2 tablespoon of cinnamon (not pictured)
Butter to rub on baking pan

Preheat to 350°F.

Start by cutting the pears into about 1/2 inch chunks.  Anything between 1/4 to 3/4 an inch will be just fine.  

Put in a medium mixing bowl.  Put in flour, cinnamon, baking powder and sugar.  Next put in 3 eggs.  Mix with a spatula (it will be chunky looking).


This is what mine looks like.

Spead into a 8 by 8 baking pan smeared with butter.


Bake for 50 to 55 minutes.  

Let fully cool.  Cut and enjoy!
